On a recent birthday trip to Malta, the highlight wasn’t just the historic charm of Valletta or the golden coastline; it was an unforgettable dining experience at ION Harbour by Simon Rogan, a restaurant my friend insisted I couldn’t miss. I’m endlessly grateful they made it happen.
Perched high above the city, ION Harbour offers what might be the most spectacular view of Valletta’s Grand Harbour, a living postcard that shifts in colour as the sun begins to set. But what truly made the evening extraordinary was the philosophy behind every plate: a deep respect for farm-to-table dining, where local, sustainably sourced ingredients at their peak take centre stage.


The menu, inspired by seasonality and Malta’s natural bounty, changes constantly, a living, breathing reflection of what’s freshest and most flavourful at that very moment. Each dish was a revelation, crafted with intent, balance, and a surprising twist.
Two plates stole my heart. First, the Hokkaido pumpkin with Red Earth Farm sticky yolk, paired with a Benedettin cheese sauce infused with rosemary). The textures and balance were exceptional — comforting, but with a refined depth of flavour. Then came the truffle pudding glazed in carob molasses, served alongside a bold stout from The Brew and aged Maltese pecorino. It was rich, indulgent, and entirely unforgettable.





As dinner drew to a close, fireworks lit up the night sky, casting reflections over the Grand Harbour, a perfect finale to an already magical evening.
ION Harbour by Simon Rogan was more than a meal; it was a celebration of place, season, and craft. I left feeling inspired, grateful, and deeply content. Without a doubt, it was a birthday I’ll always remember.
