Elaine’s Spiced Cranberry Sauce

As I attempted to empty the freezer before my upcoming kitchen refit I discovered some frozen cranberries leftover from last Christmas. Porridge is a key staple in our house these days, and now autumn has well and truly arrived it’s back at the top of the breakfast wish list. So I pulled out an old favourite porridge topping: Spiced apple and cranberry sauce.

I’m a big stewed apple fan – any sort of stewed apple dessert is a winner for me, with the exception of strudel: in my humble opinion, grapes should not be wasted on creating raisins, they should be enjoyed in their purest, liquid form!

Having warmed apple and cranberry sauce makes the morning porridge much more appealing and it’s a winner with both the adults and kids in our house. It’s a very simple recipe, quick to rustle up, and can be frozen in batches (I use a very large silicone ice cube tray) so can be defrosted quickly in the morning.

Spiced Apple & Cranberry Sauce Recipe

Ingredients

  • 3 eating apples, peeled, quartered, cored and diced
  • 200g cranberry (fresh or frozen)
  • 1 tsp mixed spice
  • 5 tbsp caster or granulated sugar

Method

  1. Put the apples in a pan with 100ml water and cook gently until almost softened.
  2. Turn up the heat.
  3. Add the cranberries, mixed spice and 3 tbsp of the caster or granulated sugar and bubble until saucy.

Perfect served on top of creamy porridge, French toast, waffles or pancakes for a warming breakfast.
